Chunky Chips

Ingredients

2 Tsp: Basil, Dried

1 Seasoning: Salt, Sea Coarse

1 Seasoning: Pepper, Corn Black

8 Whole: Garlic, Clove (Fresh)

500 g: Potato, White

3 Tbsp: Oil, Extra Virgin Olive Oil

Method

Cut the skins off the potatoes so that you are left with as big a rectangular cube as possible, rinse and then cut into equal chips that are a minimum of 1cm thick (all round)

Par boil the chips for about 10 minutes in lightly salted water (take care to make sure the chips do not become soft).

Remove the chips from the water and place in a frying pan with olive oil and garlic cloves, season lightly with pepper and herbs.

Fry the chips until slightly golden on all sides.

Remove to a baking tray along with the oil and garlic and bake in a pre heated oven (220C / 400F / Gas 7) until brown.
