Amazing Veggie Breakfast - With Omelette

Ingredients

Main Ingredients

2 Handful: Tomato, Fresh Cherry, Chopped

300 g: Pea, Petis Pois (Frozen)

1 Seasoning: Butter, Salted

1 Seasoning: Salt, Pink Himalayan Rock Salt

1 Seasoning: Pepper, Corn Black, Crushed

1 Whole: Garlic, Clove (Fresh), Crushed

2 Whole: Vegetable, Burger (Wheat and Yeast Free)

4 Whole: Egg, Free Range (Organic)

2 Handful: Spinach, Leaf (Fresh)

1 Seasoning: Oil, Olive Oil

Method

Pre-geat the Grill. Place a knob of butter in a medium saucepan, add the peas and garlic, and place over a medium heat for 10 minutes.

Add some oil to a frying pan and place over a medium heat. Place the eggs in a jug. Season with a pinch of salt and pepper and whisk.

Brush the Veggie burgers with oil on both sides and grill for 5 minutes on each side.

Slice the tomatoes and set asside.

Remove the peas from the heat, season with salt, pepper and lemon juice and mash roughly.

Add the spinach to the pan, cover and return to the heat for 3 minutes stirring frequently. Add the eggs to the frying pan.

Remove the veggie burgers from the gril, place on a plate and sit a cooking ring on top.

Flip the omelette to cook on top for a few seconds then remove from the pan and Cut into circles with the a cooking ring - Shred any leftovers.

Add half the omelette circles to the ring.

Spoon half the peas into the ring and gently press down.

Add half the tomatoes.

Add half the shredded omelette to the top and carefully temove the ring.
