Bacon and Broccoli Omletties

Ingredients

25 g: Butter, Salted

1 Seasoning: Pepper, Corn Black, Crushed

3 Slice: Bacon, Smoked, Chopped

2 Whole: Egg, Free Range (Organic), Beaten

5 Floret: Broccoli, Fresh, Chopped

Method

Melt the butter in a frying pan.

Chop the bacon into 1cm square pieces then chop the broccoli into small pieces and add to the frying pan.

When the bacon is cooked through (not crispy) make space in the pan for 2 cooking rings.

Turn the heat down to low. Divide the bacon and broccoli mixture between the cooking rings.

Beat the eggs and season with pepper.

Add the beaten eggs, divided equally between the two rings.

Cook over a low heat until the egg is set enough to turn the omletties over.

Turn the omletties and continue cooking over a low heat until cooked through.
