Lentil Stuffed Tomatoes

Ingredients

Main Ingredients

2 Tbsp: Basil, Fresh Leaf, Finely Chopped

2 Tbsp: Coriander, Fresh Leaf, Finely Chopped

1 Whole: Chilli, Red (Fresh), Finely Chopped

4 Whole: Tomato, Fresh Beef Steak

1 Tbsp: Butter, Salted

1 Seasoning: Salt, Table

1 Whole: Onion, Brown (Fresh), Finely Chopped

1 Seasoning: Pepper, Corn Black

2 Whole: Garlic, Clove (Fresh), Crushed

1 Tsp: Ginger, Powder

0.5 Tsp: Garam Masala, Powder

200 g: Lentil, Green Split, Boiled

4 Tbsp: Oil, Extra Virgin Olive Oil

Method

Preheat the oven to 180c, boil the lentil for 25 mins, drain and leave to cool

Rinse the tomatoes, cut off the top and scoop out the flesh.

Grease a heatproof dish with the butter, place the tomatoes in the dish.

Heat the oil in a pan and fry the onions until golden

Lower the heat and add the ginger, garlic, salt, pepper ad garam masala - Stir fry for 3-5 minutes.

Add the lentils, chilli and coriander and continue to fry for 3 minutes

Spoon the mixture into the tomatoes and replace the tops.

Cook in the oven for 15-20 mins.

Transfer the tomatoes to serving plates, Serve hot
