Main Ingredients
50 g: Butter, Salted
50 ml: Milk, Fresh Semi-Skimmed
1 Kg: Potato, White
3 Whole: Leek, Fresh
Peel and cut the potatoes, place in a large pan and cover with water. Add a little salt and bring to the boil. Lower the heat and simmer for 20 minutes or until the potatoes are soft but not mushy.
About 10 minutes before the potatoes have cooked add the chopped leeks to the pan.
Drain the potatoes and add the butter and milk then mash the potatoes until smooth and creamy. Season to taste with salt and pepper.
